i like to mix japanese sushi rice with sticky rice. It results in pleasantly chewy and fragrant bowls of rice. Make sure you soak the sticky rice over night before cooking.

you want to use a good-sized fish head for this casserole. I like salmon or sea bass. The meat on the two sides of the head has an exquisitely delicate and tender taste. As a tradition, it is usually reserved for the eldest or the most respected member at the dinner table.
